Amaranth and Zucchini
There are many simple ways to use Amaranth. You can use it like spinach and together with other vegetables. This recipe is a good example of how you can easily turn Amaranth greens into an exciting dish.
Ingredients:
1 yellow zucchini squash 2 handfuls of Amaranth leaves 1 garlic clove Olive oil Salt and pepper to taste Directions: Slice and quarter the zucchini. Mince the garlic. Chop the Amaranth leaves coarsely. In a skillet, heat olive oil and sauté garlic and zucchini on medium high for about 5 minutes. Cover with lid and cook for 5 more minutes, adding a bit of water if necessary. Add the Amaranth leaves, stir and cover lid and cook for another 5 minutes or until all vegetables are tender. Add salt and pepper to taste. Serve with, for example, a steak and rosemary fried potatoes. Serves 2 hungry people. |
