Amaranth cheese soup

Ingredients: 3 tbs cooking oil 1 onion 1 garlic clove 2 tbs flour 3 cups milk or broth 1 quart young amaranth leaves, chopped 4 slices bacon, crumbled 1 cup cheddar chees, grated Salt and pepper to taste Directions: Sauté onions and garlic in oil. When translucent, add flour. Stir and slowly add milk or broth and stir again. Add amaranth and salt and pepper, cover and simmer for 15 minutes. Stir in bacon and cheese and serve when cheese is melted. |
