Ingredients: 20 large clean black locust flower heads. 5 cups water 7 cups sugar 1 lemon 2 oz citric acid (optional, for preservation). When using citric acid, use a glass, ceramic or plastic bowl, metal bowls will react with the citric acid) Directions: Place the flowers in the bowl. In a large pot, add sugar and water and bring to a boil, stirring until the sugar has dissolved. Peel and slice the melon and place in the bowl with flowers. Pour the hot boiling sugar mixture onto the flowers and add citric acid. Cover with clean towel and let sit for 24 hours at room temperature. Strain. Enjoy! |
