Black locust crêpes
These sweet crêpes make a superb dessert. It would be great served with some vanilla ice cream.
I've tried making this recipe without the sugar, but sugar seems to bring out the flavor of the flowers. If left out, you won't taste the flowers at all. If you don't mind the sugar, here goes: Ingredients: 1 cup of flour 1/3 cup of sugar Black locust flowers of 15 flower heads a knob of butter 3 eggs Directions: Mix flour, eggs, water, sugar and flowers. Heat a skillet with butter. Ladle flower mixture to the skillet and cook until the crêpe comes loose and slides smoothly on the skillet. Turn and cook the other side. Serve with ice cream or any light syrup or honey and enjoy! |
