Buttery Sow thistle
Yes, it's somewhat buttery, but you really don't have to use as much. Just experiment with it. I've had great success just stir-frying the leaves in oil but that's another recipe.
But this one is truly fantastic. Ingredients: 4 big handfuls of sow thistle leaves 3 tablespoons butter Chicken broth Pinch of ground nutmeg 2 teaspoons flour Pepper Just a pinch of salt (optional) Directions: Chop the leaves into bite size pieces. Heat the butter in a large skillet. Add leaves and stir for a minute. Add ½ cup chicken broth. Cover and simmer for 10 minutes, adding chicken broth when needed. Add a dash of nutmeg, pepper and 2 tsp flour. Just a pinch of salt to taste. Stir, serve and enjoy! Serves 2 |
