Cattail flower cakes
You can eat the immature male flower heads like corn on the cob. Boil or steam them for ten minutes and serve with butter. But you can also make really nice little cakes, they will do well at picnics and parties!

Ingredients:
2 large eggs 1 Tbs milk 2 Tbs flour 1/2 Tsp baking powder 1 Cup Cattail flower spike pulp (takes about 10 flower heads) 1 Tbs minced sweet red pepper 1 Tbs minced shallot 1 1/2 Tsp minced capers (optional) 1/2 tsp salt Dash of pepper Directions: Mix the milk, eggs, flour and baking powder with a whisk until smooth. Add and mix the remaining ingredients. Cook the batter by tablespoonfuls on a griddle or frying pan on medium high heat, until browned on both sides. Serve with a dollop of sour cream and some capers (optional). Serves 12 |
