Dandelion jelly
It's a bit of work but it's fun to make with friends or family. This recipe will make 6 pint jars. And if you do it by yourself, it will take you up to 2 1/2 hours.
Ingredients: 5/6 cups dandelion flowers 4 cups boiling water 4 1/2 cups sugar 1 tsp lemon or orange extract 1 package powdered pectin Food coloring optional (I never use it) Directions: Separate the flower petals and the green. This is the most work but if you leave in the green and pieces of stem, your jelly will be bitter. Boil the petals in 4 cups of boiling water for about ten minutes. Strain the juice (using paper towel or coffee filter) and measure out three cups plus a little. Add the sugar, extract and pectin and bring to a boil until the sugar is dissolved. Boil hard for about one minute and skim. Pour into sterilized jars and seal with a water bath for 5 minutes. |
