Directions:
With a little help from your friends or family, dig up a big bunch of dandelion roots. For one cup dried chopped roots you will need about 25 fresh roots. Rinse and scrub the roots well. Chop them up in the kitchen machine and spread them in a thin layer on a cookie sheet. I always put them on a layer of parchment paper for an easy transfer when it's all roasted. Roast them for about 2 hours and 30 minutes at 200 degree F. Or if you're in a hurry, you can set the oven to 300 F but then you have stir frequently. When they're dry and darker, take them out of the oven and let them cool off before you transfer them to a jar for storage. To make the hot drink, scoop a tablespoon or so in 2 cups of water in a pot. Bring to a boil and once it starts boiling, turn down the heat and let it simmer for twenty minutes. Use a strainer when pouring the tea into a cup. Sweeten with some honey and enjoy! |
