French weed Deluxe
Fancy and good tasting patties, to be served with a glass of Gewürztraminer, on your rustic blue painted patio overlooking your vineyard.
Ingredients:
4 Slices of Prosciutto, dried in the oven at 195 degrees for 20 minutes. 1/4 Cup roasted and salted walnuts 3 medium potatoes, peeled, cut into 1/4" inches 3 Tbs clarified butter Sea salt, freshly ground pepper 3 oz fresh mozzarella, cut into small (1/4") cubes 1/4 Cup French weed leaves, chopped 1/4 Cup French weed leaves, whole 1 Tsp Parsley, chopped 1 Clove garlic 1 Tbs rice vinegar 2 Tbs walnut oil Directions: Boil the sliced potatoes for twenty minutes, then drain. Fry them in clarified butter to give them a beautiful blonde color on each side. Season with salt and pepper. Remove the potatoes from the pan and put on paper towels. Transfer to a bowl and crush the fried potatoes coarsely with a fork. Mix in French weed, cheese, parsley and garlic. Form into 4 patties about 1" thick, and fry in clarified butter in a non-stick pan. The outside should be crispy, the inside should remain soft. To serve: On plates, first sprinkle Prosciutto pieces over the patties. Then a dash of the walnuts. Top with some French weed leaves. Drizzle with vinegar and oil. Garnish with more Prosciutto and serve. Serves 4 |
