French weed potato salad
French weed has a very different flavor than other greens, it tastes a lot like Jerusalem artichokes. But it's challenging to maintain the flavor if you don't use enough French weed leaves. Leaves can grow up to 2.5’’ long and 1.5’’ wide, so if you know where they grow, let them grow to their full potential, if you can.
Ingredients:
4 medium red-skinned potatoes 2 cups of French weed leaves, packed! 6 slices hard salami, cut into small squares 1 spring onion, finely sliced 1 garlic, minced 1/3 walnut oil 1 tablespoon of capers or more to taste 1/3 cup chopped walnuts Salt and pepper to taste A couple of Arugula leaves Directions: Rinse the potatoes and cut them in small cubes, about square 1/4". Boil them for about twenty minutes, don't overcook, you want them to be just done. Drain and let cool. Cut the salami, slice the spring onion, mince the garlic, chop the French weed leaves. In a skillet, quickly sauté the onions for a few minutes, add garlic and French weed leaves and sauté for another few minutes. Put all ingredients in a big bowl. Add capers, chopped walnuts, salt and pepper to taste, walnut oil and gently mix. Let cool in the fridge for about an hour or serve when ready. Serve on a few Arugula leaves and top with some French weed leaves. Serves 4 |
