Jerusalem artichoke ice cream
A delicate, sweet, fresh ice cream with an unusual but great flavor. It may be improved greatly with other ingredients like pistachios, mint or white chocolate but this basis is a pretty good start.
Ingredients: 2 cups half and half 2 cups heavy cream 1 cup sugar 1 tablespoon honey 1 cup jerusalem artichoke flour seeds from one or two vanilla beans 1/4 tsp vanilla extract Directions: Simply mix everything together in a big bowl. Mix thoroughly because the Jerusalem artichoke flour tends to clump together. Pour the mix in your ice cream maker. Ice will be ready in 20 minutes. Pour in container and freeze. |
