Jerusalem artichoke slaw
We got this recipe from a Jerusalem artichoke vendor at a farmer's market in Tucson, it's a nice fresh salad, great flavor and texture combination.
Ingredients: First make the dressing: 2 tablespoon sour cream 2 tablespoons mayonnaise 1 teaspoon mustard 1 teaspoon finely chopped capers 2 teaspoons white vinegar Salt and pepper to taste Salad 1/2 lbs Jerusalem artichokes 1 large carrot 3 tablespoons chopped flat-leaf parsley Directions: Dressing Mix together sour cream, mayonnaise, mustard, capers, vinegar, salt and pepper in a medium bowl. Salad Peel Jerusalem artichokes and cut into fine matchsticks. Add them to the dressing to prevent discoloration, stir to coat. Cut carrot into fine matchsticks the same size as artichokes. Gently stir carrot and parsley into salad. Serves 4 |
