Lamb's-quarter and arugula salad
I found this wonderful recipe on Newlyfeds.blogspot.com and it's become a regular on our dinner table. It's very easy to make and very tasty.
Ingredients:
Dressing: 1/2 cup olive oil 4 large cloves garlic, each cut in 6 pieces 2 tablespoons balsamic vinegar Freshly ground sea salt and pepper, to taste Salad 2 cups lamb's quarters, large stems removed 2 cups of arugula, large stems removed 3 spring onions, green part removed, halved lengthwise and sliced diagonally. Crumbled goat cheese, or to taste Directions: Rinse and dry all greens in the salad spinner Whisk all dressing ingredients together in small bowl. Let the dressing sit for at least 15 minutes. Place salad ingredients in large bowl and mix. Add salt and pepper to taste and toss. Whisk the dressing, take out the garlic pieces if you prefer and drizzle generously over the salad. Place the salad on the plates. Serves 2 |
