Mini Stinging nettle tarts
Yes, it's practically the same recipe as the Stinging nettle quiche, only this recipe is for 12 mini quiches or 'tarts'.
They're smaller so they can be used as a snack and a side dish and they won't take long to bake.

Ingredients:
2 Packed cups of Stinging nettles 4 Slices of bacon, cut and fried. 2 Oz shredded Swiss cheese 1 Tbs butter, softened 2 Eggs, beaten 1/4 Cup finely chopped onion 1/4 Tsp salt 2 Tbs all-purpose flour 1/2 Cup milk Pastry pie dough, thawed, cut into squares 1/4 Cup roasted pine nuts Baking dish with 12 round forms. Directions: Preheat oven to 375 degrees F. Line forms with the pastry sheets. Sauté onions in the bacon fat until translucent. Sprinkle the pie sheets with cheese and bacon. In food processor, combine eggs, stinging nettles, butter, onion, salt, flour and milk. Process until smooth and pour into forms. Bake in preheated oven for 30 minutes, or until set. It's best to let it cool a bit so you can easily remove the tarts from the forms. |
