Mint sorbet
I've read that this is a Mexican dish and it's called: Sorbet de hierba buena.
Whatever it means, it's de-li-cious! My husband noted that it's a good palate cleanser too.

Ingredients:
1 cup fresh leaves (spearmint is better) 3 cups water 3/4 cup sugar juice of 1/2 fresh lime or concentrate to taste Directions: Cover the mint leaves in water and bring to a boil. Cover and simmer for 5 minutes, then remove from heat. Add sugar and stir until dissolved. Let cool, add lime juice and puree with a blender. Strain the juice into a freezer safe container or continue with the ice cream maker, if you have one. If not, place the container in the freezer and stir after 2 hours or until slushy. Garnish with (of course) a mint leaf and serve. |
