Old-fashioned Dandelion salad
This is my version of the typical old-fashioned Dandelion salad. Folks around here would hardly cook the greens but the older the leaves get, the tougher they become. This is a good way to prepare them, young or old. Ingredients: A bunch of young fresh Dandelion greens Two (or three) strips of bacon 1 egg 2 tbs Vinegar 1 tbs Sugar 1/2 cup Water Salt and pepper to taste Directions: Rinse Dandelion greens. Cut up bacon and fry in a skillet. Transfer bacon pieces to plate and add greens to skillet to fry in bacon fat until it's wilted. Make a dressing by mixing the egg, sugar, water and vinegar and pour it over the greens. Stir-fry over medium heat or add a bit more water and let simmer to make the greens more tender. Keep stirring until most of the water has evaporated Add salt and pepper to taste. Serve with bacon pieces. |
