Purslane sandwich spread
My sister in the Netherlands likes to serve lovely little sandwiches at parties, using home made spreads. So I asked her for some pointers and this great Purslane spread is the result. It's delicious and fresh, wonderful for picnics, breakfast or lunch.
Ingredients:
1 package of softened cream cheese Bunch of Purslane, chopped 4 oz crab meat or surimi, cut into coarse small flakes 4 sprigs chopped fresh chives 1 spring onion, finely diced 1 tablespoon fresh mint 2 radishes, sliced 1 teaspoon lemon juice 1/4 medium cucumber, peeled and sliced Salt and pepper 10 slices white sandwich bread, crusts cut off Directions: In a bowl, add all the ingredients to the cream cheese, EXCEPT the cucumber and radishes and mix thoroughly. Season to taste with salt and pepper. Toast the slices of bread. Lightly butter 5 slices of bread. Place 2 tablespoons Purslane mixture on 5 slices. Layer with some slices of cucumber and radish and cover with remaining slices. Cut diagonally across sandwiches to make 2 triangular sandwiches. Makes 10 triangular sandwiches. |
