Roasted Milkweed shoots
These are delicious and so easy to make.
Ingredients: 1 lb of rinsed milkweed shoots 2 tbsp of olive oil 2 gloves of garlic, minced pieces of bacon or Prosciutto ham 1 lemon Kosher salt and pepper to taste Preparation: Preheat oven to 400°F. Cover the shoots with olive oil using a zip lock bag. Sprinkle with minced garlic, salt, and pepper. Lay shoots out in a single layer in a foil-covered roasting pan or oven dish. Cut one or two slices of bacon or prosciutto into small pieces and scatter pieces over the shoots Place pan or dish in oven and cook for approximately 8-10 minutes until the shoots are lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice before serving. |
