Scalloped Jerusalem Artichokes
This is truly a comfort food and very easy to make.
Ingredients: 3 lbs Jerusalem artichokes 1 cup onion, finely chopped 1 cup cheddar cheese 3 tbs butter 1 can cream of celery soup 4 tbs flour 1 ½ cup milk Salt and pepper 1/4 cup bread crumbs Directions: Slice the tubers peeled or unpeeled. Make a layer in a casserole dish, sprinkle with onions and cheese. Make several layers. Make a sauce by melting butter and stir in the flour. Add milk and cream celery soup until thickened. Add salt and pepper to taste. Pour sauce over the tubers and top with bread crumbs. Bake 1 hour at 350 degrees or until tubers are tender. |
