Simple Stinging nettle soup
I like making this soup. Though it's doesn't have a strong flavor, knowing that this plant is loaded with nutrients always makes me feel great.
Ingredients: A bag of stinging nettle leaves butter or olive oil Chicken broth 1 or 2 peeled and quartered potatoes or 1 tbs uncooked white rice (optional) 1 onion chopped 2 cloves garlic minced salt and pepper to taste Sour cream Directions: Let Stinging nettle leaves soak in a large tub for a while chop coarsely using gloves In pot, melt butter or heat up olive oil and sauté onions garlic and uncooked rice. Add the nettle leaves and broth and bring to a boil. Lower heat and let simmer, covered, for 15 minutes. Blender until smooth Add salt and pepper to taste Serve with a dollop of sour cream |
