Stir-fried Wintercress

Wintercress has a very bitter flavor, but boiling greatly decreases that when you pick young leaves, picked before the plant flowers. This is a nice mellow side dish that goes with anything.

Ingredients 
a bag of young wintercress greens
salt and pepper to taste 
3 tbs butter
1 red chili, finely chopped or red pepper flakes
1 shallots, finely chopped 
1 garlic clove, finely chopped 
nutmeg to taste

Directions: 
Cover wintercress leaves in a pan with water and salt
Bring to a boil, turn down the heat and cook for 5 minutes on medium high
Drain the wintercress
if still very bitter, boil again and drain if necessary.
Heat the butter in a skillet, add the garlic, shallots and chili.
Fry for 2 minutes, then add the greens and nutmeg
Stir-fry for 5 minutes and serve.

Serves 4
