Wild leek hummus
Ingredients:
2 cans garbanzo beans 2 cloves garlic (optional) 1/3 cup olive oil 1/3 cup tahini 4 tablespoons lemon juice 1/2 teaspoon salt 1 teaspoon cumin 2 tablespoons yogurt A bunch of wild leek, start with 5 big ones or 10 small ones Parsley, olive oil and paprika powder for garnish Directions: Put all ingredients together into a food processor. process until all ingredients are finely chopped. Taste and tweak. To serve, using a spoon make a round 'ditch', add a bit of olive oil, sprinkle with paprika powder and parsley. |
