Purslane recipes
Aah Purslane, the plant that really belongs to the vegetable garden and will often just show up even if you didn't sow it's seeds. I always look forward to Purslane. I first had it in the Netherlands where I found it at the grocery store. I have not been able to find the recipe that I used back then, but it doesn't really matter. It's not hard to make something nice with this vegetable. It especially goes well with potatoes.Purslane contains more omega-3 fatty acids than any other leafy vegetable plant, Vitamin A, C, E, beta-carotene, calcium, magnesium and potassium. Not bad for such a humble ground cover. Because it's a ground cover, make sure you rinse it very well and be careful to not accidentally pick the poisonous plant Spurge instead!
