Red currant sorbet
My neighbor has a few wonderful Red currant shrubs and gave me a nice batch. Of course you can make jelly with the berries but I decided to make something else first: Sorbet, since we ran out of Mint sorbet.
Ingredients:
2 cups of berries 1 cup of water 1/2 cup of sugar ½ teaspoon corn starch Directions: In a saucepan, bring water and currants to a boil and cook a few minutes for the berries to burst and release their juices. Remove from heat. Process the mixture through a food mill over a bowl. Add sugar and cornstarch and stir until completely dissolved. Chill in the fridge. When mixture is cold pour it into ice cream maker and process for 30 minutes. You can serve it at this point or keep it in a container in the freezer. |
