Prickly Sow thistle
Don't be intimidated by the prickly spines on the edges of the leaves, it's just big talk. When you gather the young leaves, stir-frying them will take care of that. If you, like me, like the slightly more flavorful older leaves, simmer them for ten minutes or more longer. Grated nutmeg is this vegetable's best pal. And butter and broth. And pork.
