Amaranth greens recipes
Pig's ear is the name people often use when talking about this plant. Many people also think that only pigs should eat it. But that's silly because this is a great nutritious food that provides bulk to your stir fried greens, stews, soups and omelets, just to name a few uses.
Amaranth can be used in the same way as spinach, just not so much raw, like you would baby spinach. Look up my Stinging nettle quiche and poached egg recipe, for instance, and use Amaranth instead of Stinging nettles and Lamb's-quarters.
